At “Los Cerrillos”, the grapes are fermented in stainless steel tanks with a continued temperature control.

Wine is later aged in French and American oak barrels and is bottled at the property.

The entire process is controlled by a computer program, which monitors the production chain from start to finish; from the condition and ripening of the grapes, to the optimal degree of humidity and temperature of the facilities and cellar.
